Eggs are one of those ingredients that we always have at home. They’re a great base for many dishes and are most often enjoyed as a standalone meal for breakfast. Packed with protein, they help keep you full and provide essential nutrients.

1. Boiled Eggs in Cups

You just need to place the eggs in a pot with water and boil them for 3-12 minutes, depending on whether you want hard, medium, or soft-boiled eggs. This is definitely the least caloric and healthiest way to prepare eggs, and they can also be quite a fun meal. We love to eat them from egg cups, with toasted bread cut into strips to dip into the yolk (if the eggs are soft-boiled). We add just a bit of salt and pepper, and serve them with cheese, ham, fresh tomatoes, and cucumbers on the side.
2. Fried Eggs
It might seem simple, but fried eggs are a super quick and easy breakfast option, perfect for when you don’t have much time. We’ve been eating fried eggs since we were kids, often as a side dish with lunch, but they’re especially great for breakfast or brunch. We love adding them to avocado toast, or serving them with bacon, fresh tomatoes, and toast.
How to make the perfect fried egg? First, fully coat the bottom of the pan with oil or butter and let it heat up. Carefully add the eggs, and if the edges start to stick, move them with a silicone spatula. After about two minutes of cooking, tilt the pan slightly to gather the oil at the bottom edge, then spoon the hot oil over the whites. Once done, place the eggs on a plate and they’re ready for a delicious breakfast!
3. Omelet
An omelet is made from beaten eggs and milk, cooked with a little oil or butter. To get the right texture, whole eggs or just egg whites are beaten with a bit of milk to create bubbles. These bubbles give the omelet its soft and fluffy texture. Traditionally, an omelet is cooked on one side and not flipped. You can add various ingredients to make it even better—cherry tomatoes, bell peppers, ham, mushrooms, bacon, corn…
Here’s a basic recipe with a few different fillings. First, prepare the filling. For the first option, you’ll need cherry tomatoes and basil. Chop the basil and cut the tomatoes in half. Place them in a hot pan until the skin wrinkles, add the basil, and season with salt. Stir for a minute and your filling is ready. The second filling option has a few more ingredients, but it’s still very simple.
You’ll need quinoa, finely chopped cheese, cherry tomatoes, finely chopped mushrooms, black olives, and young chard or spinach. Toss all the ingredients into a hot pan and add a little salted water until the quinoa is soft. If there’s any water left, wait for it to evaporate, and your second filling is ready.
4. Scrambled Eggs
Another very common and easy way to prepare eggs is scrambled eggs. Almost everyone has their own way of making scrambled eggs; some like them well-cooked, while others prefer them softer and juicier.
Some people mix the eggs in a separate bowl with milk, while others beat them directly in the pan without adding milk. It’s important to use fresh, local eggs and cook the scrambled eggs over low to medium heat. A bit of butter will enhance the flavor and creaminess, and don’t forget to add a little salt for taste.
Make sure to turn off the heat just before the scrambled eggs are fully cooked, as they will continue to cook a little in the hot pan.
5. Poached Eggs
Poached eggs can be a bit tricky and might not turn out perfect on the first try, but they’re worth the effort. The most important thing is to use very fresh eggs. Fill a pot with water and add two tablespoons of vinegar. When the water starts to simmer, it’s time to add the eggs.
Carefully crack each egg into a small bowl, making sure the yolk doesn’t break. Create a whirlpool in the water with a spoon and gently slide the egg into the center. Cook the egg for about 4 minutes. Gently push the egg whites towards the yolk with a spoon to keep them together. Remove the egg from the water and drain any excess water.
A favorite breakfast for many is creamy poached eggs with avocado on rye bread. You’ll need a slice of rye bread, one or two poached eggs, half an avocado, a tablespoon of fresh lime or lemon juice, and salt and pepper.
Mash the avocado with a fork, mix it with the lemon juice, and season with salt and pepper to taste. Toast the bread, spread the avocado mixture on top, and place the poached egg on it. You can sprinkle some chili flakes, sesame seeds, or fresh herbs on top if you like. A perfect breakfast is ready!
6. Shakshuka
Ideal for breakfast, brunch, or lunch, shakshuka is a dish from the Middle East that is enjoyed all around the world. You’ll need a few eggs, diced tomatoes, an onion, fresh bell pepper, and some spices.
Ingredients:
- 4 eggs
- 1 onion
- 2 cloves of garlic
- 400 g diced tomatoes
- fresh bell pepper
- salt
- pepper
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon ground coriander or parsley
- 1 teaspoon sugar
- olive oil
- toasted bread
- fresh herbs to taste: basil, parsley, coriander, chives
Instructions:
Chop the onion and sauté it in olive oil in a large pan. Add the garlic, then the bell pepper cut into small cubes. Sauté for a few minutes, then add the diced tomatoes, spices, and sugar, and cook on low heat for about 10 minutes.
Carefully crack the eggs on top and cover with a glass lid. Let the shakshuka simmer for another 10 minutes until the sauce reduces and the eggs cook. The yolks should stay soft, and the whites should be cooked. When the dish is ready, sprinkle fresh herbs like parsley, coriander, or basil on top. Serve with hot, toasted bread.
7. Eggs Benedict
Probably the most popular breakfast dish worldwide, here’s how to make perfect Eggs Benedict.
Ingredients for Hollandaise Sauce:
- 3 egg yolks
- 9 tablespoons butter
- a pinch of salt and pepper
- 1 tablespoon fresh lemon juice
Other Ingredients:
- 2 eggs
- 2 slices of cooked ham
- bread
Instructions:
Start by making the sauce. Melt the butter in a saucepan over low heat. Then, whisk together the egg yolks, pepper, salt, and lemon juice, slowly adding the melted butter.
To poach the eggs, heat water in a pot, add two teaspoons of vinegar and a pinch of salt. Stir the water to create a small whirlpool in the center. Then carefully drop an egg, cracked into a small bowl, into the whirlpool and cook for two to three minutes.
Once you have the sauce and poached eggs ready, it’s time to assemble! Place a slice of toasted bread on a plate, add a slice of cooked ham, and top with a poached egg. Drizzle with the Hollandaise sauce, and you’re done!
8. Eggs in a Tortilla
Eggs in a tortilla make for an ideal, quick, and nutritious meal that will keep you full for a long time. The great thing about eggs in a tortilla is that they can be combined and prepared in various ways.
For example, you can make a tortilla filled with scrambled eggs, cheese, ham, and fresh vegetables, or enjoy a tortilla with ground meat, spicy sauce, herbs, and a fried egg. Feel free to experiment with different flavors and textures, and it’s also a great way to use up leftovers from the fridge.
9. Baked Egg Sandwiches
Baked egg sandwiches, or egg toast, are made in a muffin tin. Thin slices of soft bread are first placed and pressed into the muffin cups, then topped with your choice of ingredients (cheese, ham, bacon, vegetables, spices) and a whole egg on top. The egg sandwiches are baked at 200°C (about 400°F) until the egg whites are cooked.
10. Fried Eggs with Yogurt
Ingredients for 1 person:
- 1 egg
- 1 tablespoon Greek yogurt
- 1 tablespoon freshly squeezed lemon juice, plus extra for serving
- 1 teaspoon olive oil, plus extra for serving
- 1 teaspoon butter
- A pinch of salt
- Black pepper
- 1 chili pepper
- 1 tablespoon freshly chopped chives
Preparation: Of course, you can prepare as many eggs as you like, so increase the other ingredients proportionally. Mix the yogurt and lemon juice, and pour the mixture into the dish in which you’ll serve the egg. Fry the egg in olive oil and butter. Transfer it to the dish with the yogurt, season with salt and pepper, drizzle with a few drops of olive oil and lemon juice, add chili and chives, and serve with bread of your choice.
11. Cloud Eggs
Cloud eggs are a particularly attractive dish that looks light and airy, just like little clouds on a plate. The soft texture makes them a pleasant morning treat. These eggs are different from the usual fried or scrambled eggs because they are baked in the oven.
Before pouring the egg whites onto parchment paper, whisk them into a stiff foam, then add your favorite spices to taste. In this ‘cloudy’ base, gently place the yolks and bake for a few minutes. You can enhance them with cheese, basil, bell peppers, or onions, and enjoy them alone or with bread.
12. Deviled Eggs

The filling can include anything you prefer—often, it’s a mixture of seasoned yolks with additional ingredients like finely chopped sun-dried tomatoes, blue cheese, salmon, finely chopped chicken, or even tuna.
The base for all recipes is a hard-boiled egg cut in half, placed like little boats. If you’re handy, you can try making them in an upright shape, and for those feeling ambitious, stuffed fried or breaded eggs are a fun challenge to take on.
13. Savory Oatmeal with Poached Egg
Oatmeal doesn’t have to be sweet; it can also be savory! Here’s a great recipe that includes an egg as a key ingredient.
Ingredients for 4 servings:
- 1 cup fine oatmeal
- 3 cups water
- 2 tablespoons goat cheese
- 1/4 cup chopped roasted almonds
- Pepper
- Poached eggs
- Chopped red bell pepper
- Chopped cherry tomatoes
- Chives
Instructions: This healthy savory oatmeal takes just a few minutes to prepare. Simply add the fine oatmeal, water, and a pinch of salt to a pot. Once it boils, let it cook for a few more minutes until the oatmeal absorbs the remaining water and thickens. Then, stir in the goat cheese and remove from heat.
Divide the oatmeal with goat cheese into four bowls, and top each with a poached egg, chopped roasted almonds, and if desired, some chopped red bell pepper, a few cherry tomatoes, chives, and an extra spoonful of goat cheese.
14. Egg and Avocado Pizza
Ingredients for the dough:
- 300 g flour
- 220 ml water
- 10 g yeast
- 1 teaspoon salt
Topping ingredients:
- 1 avocado
- 1 egg
- Coarse sea salt
- Oregano
Instructions: Dissolve the yeast in 100 ml of water and add a little sugar. Then mix it into the flour and stir well. Let the dough rise in a warm place for at least an hour. Wash the avocado, halve it, remove the pit, peel it, and mash it with a fork.
Grease a baking tray with oil. After an hour, the dough should have doubled in size. Knead it and shape it into a round form, then spread it on the tray. Spread the mashed avocado over the dough, squeeze a little lemon juice over the avocado, and season with salt. Crack an egg in the center of the pizza. Bake at 200°C (about 400°F) for around 20 minutes.
15. Ramen
Eggs are a key ingredient in the famous Asian “soup,” ramen, which usually includes noodles, pork, nori seaweed, bamboo shoots, green onions, and spices. The eggs used in ramen are typically soft-boiled and then marinated in soy sauce.
