How to Make Peach Fruit Leather

1. Prepare the peaches
Wash the peaches under cold water, remove the pits, and cut the fruit into small pieces. You can leave the skins on or peel them before blending.
2. Blend until smooth
Put the peach pieces and honey in a blender. Add the lemon juice if you’re using it, then blend until the mixture is completely smooth. Scrape down the sides if needed and check that there are no pieces of fruit left.
3. Spread the purée

Aim for an even layer about 3–4 mm thick. The layer matters more than covering every corner of the tray, since peach sizes vary. Keep the edges about as thick as the center so they don’t dry out much earlier.

4. Dry in the oven
Preheat the oven to 80°C (175°F). Place the tray on the middle rack and dry for around 7–8 hours.
The exact time will depend on your oven, the amount of purée, and how evenly you spread it. Start checking before the full drying time is up. The fruit leather should feel dry on the surface, with a little tackiness, and bend without breaking. The center should have no wet or mushy patches.
If the middle is still wet, give it more time and check again.
5. Cool and cut
Take the tray out of the oven and let the fruit leather cool. Gently peel it from the silicone mat, then cut it into strips about 1–2 inches wide.
For individual rolls, lay the fruit leather on parchment paper and cut through both layers. Roll each strip with the paper to keep it from sticking to itself.
Tips for Better Fruit Leather

A smooth purée and an even layer make the biggest difference here. Any thicker patches take longer to dry, while very thin edges can become brittle.
Use the texture to judge when it’s ready rather than relying only on the clock. You’re looking for a sheet that peels away from the mat and stays flexible. Slight tackiness is fine; wet fruit purée is a sign it needs longer.
If your oven doesn’t go as low as 80°C (175°F), this recipe’s timing won’t apply at a higher setting. Check your oven’s low-temperature settings before starting.
Easy Flavor Variations

Peach and cinnamon make a lovely combination. Add a small pinch of cinnamon before blending, or try a little ground ginger for a warmer flavor.
Lemon zest is another simple addition. It gives the fruit leather a citrus scent without adding much extra liquid. Start with a small amount so the peach flavor still comes through.

Let the fruit leather cool completely before packing it away. Roll the strips with parchment paper and place them in a well-sealed, airtight container.
