White Chocolate Bark with Cranberries & Pistachios

I’m all for a Christmas treat that doesn’t involve rolling dough or baking three batches of cookies.

This white chocolate bark only takes a few minutes to put together, then it goes in the fridge. The cranberries add a little tartness, the pistachios give it crunch, and you can break it into uneven pieces and call it done.

Ingredients You’ll Need

  • ½ pound (227 g) white chocolate: Choose a white chocolate you enjoy eating, ideally made with cocoa butter. Chop it into small, similar-sized pieces so it melts evenly.
  • ½ cup shelled pistachios: Toasting brings out their flavor. Unsalted pistachios work well, or use salted ones for a little contrast with the chocolate.
  • ½ cup dried cranberries: These add chewy texture and tartness to balance the white chocolate.
  • 2 tablespoons coconut oil: Helps the chocolate spread easily and makes a softer bark that’s best kept refrigerated.

How to Make White Chocolate Bark

1. Melt the chocolate

Place the white chocolate pieces and coconut oil in a microwave-safe bowl. Heat in 30-second bursts, stirring well after each one.

Once most of the chocolate has melted, stir to melt the remaining pieces in the residual heat. If it needs another burst, keep it brief. White chocolate can scorch easily, so avoid heating it until every piece has melted before stirring.

2. Toast the pistachios

Put the shelled pistachios in a dry skillet over medium heat. Toast for 3–4 minutes, stirring often, until fragrant. Keep an eye on them so they don’t burn.

Transfer them to a cutting board and let them cool slightly, then chop into a mixture of small and larger pieces.

3. Spread the chocolate

Line a 6 × 9-inch tray or baking pan with foil, leaving enough overhang to lift the bark out later. Smooth the foil as much as you can.

Stir the melted chocolate until smooth, then pour it into the lined pan. Spread it evenly with a spatula.

4. Add the toppings

Scatter the chopped pistachios and dried cranberries over the chocolate. Gently press them into the surface so they stay attached when you cut or break the bark.

Try to spread the toppings across the whole pan so each piece gets a little of both.

5. Chill until firm

Let the chocolate cool briefly at room temperature, then refrigerate for 1–2 hours, or until firm enough to lift and cut.

Use the foil overhang to remove the bark from the pan. Peel away the foil and cut into roughly 10 pieces, or break it into uneven shards.

Tips & Tricks

Use good-quality white chocolate rather than candy melts for this recipe. The white chocolate is the main flavor, so choosing one you like makes a difference.

Keep the bowl and utensils dry when melting the chocolate. Water can cause it to seize and become thick or grainy.

For a citrus twist, add a little finely grated orange zest. Stir it into the melted chocolate or sprinkle it over the top with the cranberries and pistachios. Avoid adding orange juice, which can affect the melted chocolate’s texture.

If the bark cracks while you’re cutting it, don’t worry. Uneven pieces look lovely piled on a serving plate or packed into a small gift box.

How to Store It

Store the bark in an airtight container in the refrigerator. Place parchment paper between layers to keep the pieces from sticking together.
