A can of chickpeas usually ends up in hummus, soup, or a salad in my house.

Then I started frying them in a pan with olive oil and spices, and now I also keep a few cans around for this quick snack.
These pan-fried chickpeas are crisp on the outside and softer in the middle. I season them with garlic, smoked paprika, cumin, oregano, and thyme, although the spice mix is easy to change depending on what you have.
They take about 15 minutes to cook and there is no need to turn on the oven. I eat them warm straight from the pan, but they are also useful as a crunchy topping for salads, soups, and grain bowls.
Pan-Fried Chickpeas Recipe
Prep Time: 10 minutes
Cook Time: 15 minutes
Servings: 4

Ingredients
- 2 cans chickpeas, 15 oz each
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp smoked paprika
- 1 tsp dried oregano
- ½ tsp ground cumin
- ½ tsp dried thyme
- ¼ tsp red pepper flakes, optional
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp lemon juice, optional

Instructions
- Drain and rinse the chickpeas. Spread them over a clean kitchen towel or paper towels and dry them thoroughly. Remove any loose skins.
- Heat the olive oil in a large frying pan over medium-high heat.
- Add the chickpeas in a single layer. Cook for 10–12 minutes, stirring every few minutes, until they are golden and crisp on the outside.
- Reduce the heat to medium. Add the paprika, oregano, cumin, thyme, red pepper flakes, salt, and black pepper.
- Stir well and cook for another 2 minutes so the chickpeas are evenly coated.
- Add the minced garlic and cook for about 1 minute, stirring often. Do not let the garlic burn.
- Remove the pan from the heat. Add the lemon juice, if using, and toss once more.
- Let the chickpeas cool for a few minutes before serving. They will become slightly crispier as they cool.

Tips
- Dry the chickpeas well before frying. Any remaining water will cause them to steam instead of becoming crisp.
- Use a large pan and avoid overcrowding it. Cook the chickpeas in two batches if necessary.
- Add the garlic near the end because it can burn during the longer frying time.
- Serve them as a snack or add them to salads, soups, and grain bowls.
- Pan-fried chickpeas are crispiest on the day they are prepared.
