Ground Turkey Taco Soup

Do your kids also eat dinner with fewer complaints when it is served as soup?

Mine usually do, which is why I make soup often, even when I could use the same ingredients for tacos or chili.

This ground turkey taco soup has beans, corn, carrots, tomatoes, and a lightly spiced broth. The ground turkey keeps it lighter than the beef version, but there is still enough going on in the bowl to make it a proper dinner.

It takes about 45 minutes from start to finish and everything cooks in one pot. I serve it with lime wedges and let everyone add their own cheese, sour cream, avocado, or crushed tortilla chips.

Ground Turkey Taco Soup Recipe

Prep Time: 15 minutes
Cook Time: 30 minutes
Servings: 6

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 small onion, diced
  • 2 medium carrots, sliced
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 can diced tomatoes, 14.5 oz
  • 1 can kidney beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 cup corn, fresh, frozen, or canned
  • 4 cups chicken broth
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • Juice of 1 lime
  • Chopped cilantro or parsley, for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the ground turkey and cook for 5 to 7 minutes, breaking it into small pieces with a wooden spoon.
  2. Add the diced onion and carrots. Cook for about 5 minutes, stirring occasionally, until the onion softens.
  3. Stir in the garlic, chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Cook for 30 seconds.
  4. Add the tomato paste and stir it into the turkey and vegetables. Cook for another minute.
  5. Pour in the diced tomatoes and chicken broth. Add the kidney beans, pinto beans, and corn.
  6. Bring the soup to a boil, then reduce the heat. Cover and simmer for 20 minutes, or until the carrots are tender.
  7. Stir in the lime juice. Taste and add more salt or seasoning if needed.
  8. Ladle the soup into bowls and top with chopped cilantro or parsley. Serve with extra lime wedges.

Tips

  • Ground chicken or ground beef can be used instead of turkey.
  • Add a diced jalapeño with the onion for more heat.
  • If you prefer a thicker soup, mash some of the beans against the side of the pot.
  • Serve it with shredded cheese, sour cream, avocado, or crushed tortilla chips.
  • Store leftovers in an airtight container in the refrigerator for up to four days.
